Chinita's Places : I. Island Hopping

Travelling,  is one of the most rewarded self-pampering, a work exhausted individual can get. Rest and relaxation, tranquility and quite atmosphere are some of the criteria one must list when choosing a travel destination. Islands and beaches are "must-see" travel haven for most "bakasyunistas" in seek of space breather from congested city living. 

So, are well known beach resorts found in neighboring provinces and nearby cities are the best choices? Absolutely not. If you're main goal is tranquility and quite space, that, would enable you to recharge your mind and body from all the heavy workloads, or, if your aiming to alleviate all the stressors you've gained from the never-ending office hours, I don't think going to those famous and tourist spots beach resorts would be the best idea. Sure, places like Boracay, Puerto Galera, Laguna's Hot Springs, Batangas' Beaches are known travel destinations in the country,  but this also mean,you'll be dealing to numerous number of people in vacation, which mostly resulted in noise disturbance and solemnity deprivation. Again is this your main purpose for travelling? Quite,peace, relaxation, rest and tranquility right?

Just recently, I found a great travel article in yahoo that features 10 of  Little Known Dream Island , which I think best suits to a traveler's purpose of rest and relaxation. Undiscovered, not well known, secluded and yet still promise paradise, good cuisine, exciting culture learning, and new acquaintances. Readers, maybe some of this  places can be a good reference in finding a new travel haven or if your planning for an out of the country destination, may I suggests these islands to be on your list?



Fakarava, French Polynesia

Overshadowed in popularity by neighbors Tahiti, Bora Bora, and Moorea, Fakarava – a pristine Polynesian island enveloped by a coral reef and blue lagoon waters – is so remote, it's not even found on most maps. Yet, it's part of a UNESCO nature reserve and rich in natural fauna, offers pink-sand beaches, and is rife with rare aquatic life that includes loach, meru, and barracuda – not to mention hammerhead and tiger sharks. Not surprisingly, scuba diving is the undiscovered island’s top draw, but other attractions include the ancient village of Tetamanu, where you’ll find a Catholic church made of coral that dates back to 1874, and pearl farms, where rare black pearls are shelled.


Culebra, Puerto Rico

Madonna has La Isla Bonita, but the rest of us have La Isla Chiquita, a nickname for this little island just east of the Puerto Rican mainland whose coat of arms features a scepter and a snake. As if that weren’t cool enough, Culebra’s most  attention-grabbing feature is its day-glo blue waters, made particularly clear and brilliant by the absence of any run-off. And with its miles of sandy beaches, some evocatively peppered with disused American military hardware, this is a mighty pleasant isle to run off to. This onetime pirate’s lair is now the domain of nesting green sea turtles, brown boobies ,and savvy visitors who know that it’s just an easy ferry ride from Fajardo (on Puerto Rico) that transports them to this Caribbean dream.


Ile d’Orleans, Quebec, Canada
It may be located just over three miles from Quebec City, but Ile d’Orleans is without question a treasure island. Its long and slender form parked in a wide section of the St. Lawrence River gives it a Manhattan-style aspect, but in every other it’s the polar opposite. Peaceful and green, Ile d’Orleans is like a microcosm of the Quebecois countryside, and it packs quite a bit of history. The ancient Huron called it “Minigo,” meaning “Enchantress.” Jacques Cartier stepped ashore in 1535 and was also presumably enchanted, not least by the wild grapes he found growing on the island. French colonial history runs deep here, in spots like Le Manoir Mauvide-Genest, built in 1734 and now a heritage museum. Drive along the meandering roads and stop to buy some of the sweetest strawberries you’ll find anywhere. From one point you can see the Montmorency Falls. Get to the island via the Ile d’Orleans Bridge from the mainland.


Lamu, Kenya
Kenya’s oldest living settlement, Lamu boasts golden sands fronting the Indian Ocean, tiny villages, and a breezy, slow-moving pace of life. It's an undiscovered island that offers a glimpse into the past – a place where donkeys are the main mode of transportation and residents still keep their arms and legs covered out of respect while out in town. The rich atmosphere and history alone makes Lamu worth the trek, but so do its beaches: Shela Beach offers the best swimming, while excursions to ruins and coral reefs could have you snorkeling alongside frolicking dolphin


Monhegan Island, Maine
Though artists have sought out this remote, car-free destination for over a century, Monhegan largely remains an undiscovered island. Full-time residents number around 75, whose main occupation is fishing or lobstering, supplemented by an artists’ colony and tourism. Visitors who make the hour-long ferry ride from the Maine mainland can discover firsthand the beauty and simplicity of the village and surrounding landscape. Lobster Cove in particular draws nature lovers for its bird-watching and coastal views. Don’t miss the Monhegan Museum, housed in what was once a lighthouse and residence – it showcases the history of the community and boasts an extensive collection of local artwork. There are a handful of quaint inns and cottage rentals to choose from, though note that some accommodations are only open May through October.


Ponza, Italy
Ponza is the largest of the Pontine Islands, a stunning volcanic archipelago just off the western coast of Lazio, midway between Rome and Naples. But it’s still pretty small, just 5.5 miles long by 1.5 miles wide (at the widest). Foreign visitors remain something of a rarity, but many Italians, including some famous fashionistas are known to frolic on the island. Here, visitors spend warm lazy days at pristine beaches such as Chiaia di Luna (Half Moon Beach), and scuba dive to discover such underwater treasures as sunken ships and coral beds. According to Andrea Sertoli of Select Italy, which can customize tours to Ponza and neighboring islands, “everyone runs to Capri, but Ponza has escaped mass tourism and remains a secret gem.” Avoid the craziness of Naples by taking a ferry from Terracina or Formio instead.


Surin Islands, Thailand
The Surin Islands are located some 43 miles offshore from Thailand’s Phang Nga province, which is centered on the mainland’s Andaman Sea coast. Cinema buffs may recognize the area’s exquisitely chiseled rock formations, which seem to rise straight up from the sea, from the James Bond classic The Man with the Golden Gun, part of which was filmed on an island in Phang Nga bay. But the Surin archipelago, which numbers five islands, takes unspoiled and exotic to the next level: the whole chain is a national park, famous for its pristine coral reefs. One of the best scuba spots in these parts (or anywhere, for that matter) is Richelieu Rock, a reef with a wealth of purple corals discovered by Jacques Cousteau. Here the likes of parrotfish, rainbow wrasse, and whale sharks, the so-called “kind giants of the sea,” abound. For those who prefer to stick to the shore, the islands offer plenty of bleach-white sandy beaches and other placid charms. You can take a nature hike on the largest of the Surins, Ko Surin Nuea, but look out for flying lemurs. To get to the Surin Islands, take a ferry from points along the Phang Nga coast.


Terre-de-Haut, Guadalupe
Les Saintes, a spectacular cluster of eight undiscovered islands situated just off the coast of Guadeloupe and accessible only by ferry or private yacht, is the very essence of French West Indies life – without the crowds, to boot. Terre-de-Haut is the most appealing of them all, with its attractive beaches, mouth-watering Creole cuisine, and laid-back French-speaking locals; it also has the most options for overnight accommodations of Les Saintes' islands. Beach bums will love the powdery white sands of the palm-lined Plage de Pompierre, while the spectacular underwater world of colorful reefs and exotic fish (attracting divers as renowned as Jacques Cousteau) makes scuba diving and snorkeling another huge draw. Rent a golf cart to get around (you won't find much in the way of cars here) and zip around to a different beach at dawn, midday, and dusk.


Water Island, USVI
Water island is located a stone’s throw (okay, a five-minute ferry ride) from Charlotte Amalie, the capital of the U.S. Virgin Islands located on the island of Saint Thomas, but in some respects it’s a world away. With fewer than 500 acres, Water Island is the smallest of the USVI. Like other islands in the group, it was a Danish possession before it passed to American hands. Historically, its freshwater ponds – a rarity in these parts – made the island a popular spot for pirates. These days, you can indulge your buccaneer spirit with a swim at Honeymoon Beach or a ramble among the ruins of old cotton plantations. You can camp on the island or ramp up the comfort level with a stay at the Water Island Cottage and Apartments, located on the scenic seaside Providence Point. 

The spectacular underwater world of colorful reefs and exotic fish (attracting divers as renowned as Jacques Cousteau) makes scuba diving and snorkeling another huge draw. Rent a golf cart to get around (you won't find much in the way of cars here) and zip around to a different beach at dawn, midday, and dusk





Yap, Micronesia

Part of a remote tropical archipelago in the midst of the Pacific, Yap is the most intriguing destination in the island nation of Micronesia. Having managed to escape most outside influences, like colonization and mass tourism, the undiscovered island's traditional way of life remains both authentic and distinct: Legends are portrayed in colorful dances; village women dress in grass skirts, the men in brightly colored loincloths; and ancient stone money discs are still used as local tender (though the U.S. dollar is the official currency). Spend your days hiking among the island's rolling green hills, mangrove forests, and antiquated stone paths or, go off and explore the ocean’s coral reefs and swim with dolphins and magnificent manta rays.

Fashion Forward : III. Shirts, Blouses and Tees - Office/Casual

Shirts, blouses and tees are every woman's must have in her closet. A well designed top, made of good quality can both serve on a work and causal clothing basis. Imagine the financial saving you can get if you acquire a set of clothing that can be use on dual purpose? Great isn't it, most especially at this times in which practicality precedes self happiness and pleasures. 

To my fellow women and ladies here are some shirts, blouses, tees that I've found in two of the most Great Quality Brands on woman clothing - J. Crew and Zara. I know for some their respective clothe's prices seems to be in the expensive side, but come to think of it, if you can buy a top worth 2-3 thousand pesos each,  but you can wear it both in your casual weekends activities and well-applaud office uniforms and maybe in some of the most anticipated parties, imagine how much money you can save for clothing requirements of more than two occasions.

Movie Marathon : III. "Howl's Moving Castle"



Last night believe it or not, I found a time worth movie in Disney Channel. Yes you're right, the channel responsible for giving us Mickey Mouse and Company, Snow White, Mulan, Arielle of Little Mermaid, The Upin and Ipin Show, and all the kiddie show that a twenty something like me wouldn't even think of including in her channel list. Guess that's not the case for me. I truly enjoy watching this movie, indeed qualitative and enjoyable.

If you're a big fan of Harry Potter, then you sure are into a big treat. Wizardry meets Cinderella and Jane Eyre, the major themes of this movie. Who would have thought that  for a moving castle, hiding its exact location was never a problem if you have an expert wizard as a master. While if you think that getting old means boredom and grayish life, then you're wrong. The heroine was cast on a spell by an evil and deceitful witch who's only aim is to maintain her youthfulness, and yet she managed to put a once in a lifetime adventure for herself and even found true love in the end. Even with her weakling bones and arthritic joints, she did not limit herself to be an aid for others that eventually became her own family. Will power and strong determination are just some of the great attitudes you have to possess to be able to accomplish an important mission. Lastly, striving for the goodness of your community is an incomparable deed even if it means to be an outcast of  your own society, lost all the respect and prestige that once belong to you, and be forever a monster in the eye of your people, as part of the consequences you have to endure for disobeying the rules of  your own government and instead make the necessary and rightful actions just to achieve what is best for everyone like gaining a peaceful and quite life. These are some of the interesting lessons and messages, the story conveyed. 

Yes it maybe childlike and animation is more of a kiddie stuff but somehow, a movie like this is a lot more worthy and made of good quality. Magic spell, witch craft and wizardry may be its main ingredients but the simplicity of the message it deliver in end is what makes it remarkable and enticing! Are we not forgetting Toy Story 3, Finding Nemo, Brave and lastly the well applauded UP, what these movies have in common? They are made for animation but possessed a hearty scripted story that gave laughs, smiles, tears and endless joy to the kids and kids at heart.

So people, I'am recommending this film to be part of your weeknight's marathon and urging you to find some of these for your children, nieces, nephews, inaanaks, as shaping their values and attitudes will be a lot easier. Have fun watching!

I know each of us have a kid inside waiting for exploration and discovery.

Food Junkie : II. Healthy Eating


Today let me share to you some healthy recipes I have found from Dr. Oz's healthy website. I've been a fan of him since his Oprah episode. Indeed his thoughts and advises towards healthy living are encouraging and would convinced someone to choose the healthy path. As a food lover and my self -confessed addiction on this matter, I'm dedicating this post to those individuals who like me, cannot give-up their forbidden relationship with foods and yet striving to be healthy at the same time.Guess what guys? we don't have to as long as we master the principle of substitution and decide to
make healthy food options.

  1. Chicken and Spinach Panini. Perfect healthy lunch or dinner for the sandwich lover, just like me.
Ingredients
Pam Organic Canola Oil Spray
2 tbsp extra-virgin olive oil, divided 
1 tsp chopped fresh rosemary
4 (4 oz) chicken cutlets
1/4 cup chopped drained oil-packed sun-dried tomato
1/8 tsp crushed red pepper
8 garlic cloves, thinly sliced 
1 (6 oz) package fresh baby spinach 
3/8 tsp salt, divided 
1/8 tsp freshly ground black pepper 
8 (1 oz) slices country-style Italian bread 
1/2 cup (2 oz) shredded fresh mozzarella cheese 

Directions
Combine 2 tsp olive oil, rosemary, and chicken in a large zip-top plastic bag. Seal and marinate in refrigerator 30 minutes.

Heat a large nonstick skillet over medium-high heat. Add remaining 4 tsp oil to pan. Add sun-dried tomato, red pepper, and garlic; sauté 1 minute or until garlic begins to brown. Add spinach; cook 1 minute or until spinach barely wilts. Stir in 1/8 tsp salt; set aside.

Heat a grill pan over medium-high heat; coat with cooking spray. Sprinkle chicken with remaining 1/4 tsp salt and black pepper. Cook chicken 3 minutes on each side or until done. Remove chicken from pan; keep pan on medium-high heat.

Top each of 4 bread slices with 1 tbsp cheese, 1 chicken cutlet, one quarter of spinach mixture, 1 additional tbsp cheese, and remaining 4 bread slices.

Recoat grill pan with Pam Organic Canola Oil Spray. Arrange 2 sandwiches in pan. Place a cast-iron or heavy skillet on top of sandwiches; press gently to flatten. Cook 4 minutes on each side (leave skillet on sandwiches while they cook). Repeat procedure with remaining 2 sandwiches. Cut each sandwich in half; serve immediately.




     2.  Eggplant Roll-ups. Coming from Dr. Joel Fuhrman's  7-Day Crash Diet. You heard it right folks,  
Dr. Oz is recommending this practice for those who's main objective is loose weight. The key elements- make it a lean, green and skinny supper, and this recipe is the perfect food choice.

2 large eggplants, peeled and sliced lengthwise 1/2 inch thick
2-3 tbsp water
2 medium red bell peppers, seeded and coarsely chopped
1 medium onion, coarsely chopped
1 cup chopped carrots
1/2 cup chopped celery
4 cloves garlic, chopped
8 oz baby spinach
1 tbsp no-salt seasoning, adjusted to taste
2 cups no salt added or low-sodium pasta sauce, divided
6 oz non-dairy mozzarella-type cheese, divided

Instructions:Preheat oven to 350°F. Lightly oil a non-stick baking pan. Arrange eggplant in a single layer in the pan. Bake about 20 minutes or until eggplant is flexible enough to roll up easily. Set aside.

Heat 2 tablespoons water in a large pan, add the bell pepper, onion, celery, and garlic; sauté until just tender, adding more water if needed. Add the spinach and seasoning and cook until spinach is wilted.

Transfer to a mixing bowl. Mix in 2 to 3 tablespoons of the pasta sauce and all of the shredded cheese. Spread about 1/4 cup of the pasta sauce in a baking pan. Put some of the vegetable mixture on each eggplant slice, roll up and place in a pan. Pour the remaining sauce over the eggplant rolls. Bake for 20-30 minutes, until heated through.

    
        3.  Lean Bean Enchiladas.  Part of Dr. Oz. " Calorie Cutting Challenge. Would you believe that this just contains  a small 300 calories as compare to the common enchiladas we've eaten or bought in restaurants and food chains, the secret weapon - substitute commonly used wraps with CABBAGE.  Plus, we get the cancer beneficial of cabbage content.


12 large cabbage leaves
1 large onion, chopped
3 garlic cloves, chopped
1 tbsp chili powder
1 tsp cumin
2 cups black beans, rinsed and drained
1 cup cooked quinoa
1/3 cup 1% cottage cheese
1 cup fire-roasted diced tomatoes
3/4 cup enchilada sauce
3/4 cup shredded 2% cheese, monterey jack or mexican blend

Directions Preheat oven to 350°F. Spray 2 13 x 9-inch baking pans with nonstick spray.

In a large saucepan, add 4 cups of water and bring to boil. Remove core from cabbage and carefully peel off 12 leaves. Remove from heat. Place cabbage leaves into water for 5-10 minutes or until soft. Remove cabbage leaves using tongs and place leaves on paper towels.

Spray a large skillet with nonstick spray. Sauté onions for about 5-6 minutes over medium heat. Add garlic, chili powder, cumin, black beans, and quinoa. Cook for another 2-3 minutes, stirring often. Remove from heat. Add cottage cheese and diced tomatoes and mix until well combined.

Add 1/4 cup of enchilada sauce to bottom of pan and spread evenly. Fill each cabbage leaf with an equal amount of filling, about 1/3 cup each. Fold enchilada and place seam-side down into baking pan. Repeat with all cabbage leaves. Pour remaining enchilada sauce evenly over enchiladas.

Top with shredded cheese. Cover with aluminum foil and bake for 15-20 minutes or until bubbly on top. Serve hot.


             4. Easy Vegetable Pizza. Now who says eating pizza is unhealthy meal?  Not at all. I have to admit, I'm a big fan of this dish, whenever I go to pizza parlor. Me and my mother always choose either garden fresh or go all the way with the veggie pizza. I'm always craving for Yellow Cab's - Garden Fresh Pizza and California Pizza Kitchen's - Vegetable's Pizza. In my opinion, veggie pizza are far more mouth-watering than the usual traditional pizza, and it's not boring as well, I got the same taste and satisfaction that I get in eating  an all the meat pizza. This next recipe is also part of Dr. Joel Fuhrman's  - & Day Crash Diet.

4 large 100% whole grain pitas
2 cups pasta sauce, no-salt-added or low-sodium
1/2 cup chopped shiitake mushrooms
1/2 cup chopped red onion
10 oz frozen broccoli florets, thawed and finely chopped
1/2 cup shredded non-dairy mozzarella-type cheese 

Instructions:Preheat the oven to 200°F. Place pitas on two baking sheets and warm for 10 minutes. Remove from oven and spoon on the pasta sauce. Sprinkle evenly with the mushrooms, onion and broccoli. Add a light sprinkle of cheese. Bake for 30 minutes.




        5.  Fudgy Black Bean Brownies with Banana Treat.  Is healthy eating means giving up your perfect decadence with dessert? Absolutely not! Once again the key is proper and appropriate substitution of the conventional ingredients with the nutritious one.In this case, instead of our usual massive calorie costs ice cream, why not try blended banana, same amount of sweetness but less fat and sugar content to burn.

2 cups cooked black beans or canned no-salt-added or low-sodium black beans, drained
10 Medjool dates
2 tbsp raw almond butter
1 tsp vanilla
1/2 cup natural, non-alkalized cocoa powder
1 tbsp ground chia seed
Raspberries or other berries for topping

Banana Treat

Ingredients 2 frozen bananas
Handful of blueberries
A few walnuts

DirectionsPreheat oven to 200° F.

Blend the black beans, dates, almond butter and vanilla in a food processor or high powered blender until smooth.

Add the remaining ingredients and blend again. Pour into a very lightly oiled 8 x 8 inch baking pan and bake for 1 1/2 hours.

Cool completely before cutting into small squares. Top with raspberries or other berries.

Blend bananas, blueberries, and walnuts in a high speed blender.

Pair the banana treat with the warm brownies and enjoy!

Guys I hope you all enjoy and try all the featured recipes I've presented to you. By now, you all know that healthy eating doesn't necessarily means you have to give the joy trying/cooking  sumptuous meals. All we have to do is to make smart food substitutes that would aid us in decreasing too much calorie intakes and eventually leads to our desired weight loss.  We don't need to bore ourselves  with similar and repeated food menus, we can still have our pizzas, brownies, pastas, enchiladas and prepare it in a more creative and healthy kind of way. Healthy eaters is not synonymous with boredom, please do remember that.

Grandma : I am writing about you, actually, but more important than the words is the    pencil I'm using. I hope you'll be like this pencil when you grow up.'

Boy : But it's just like any pencil I've ever seen.

Grandma : That depends on how you look at things. It has five qualities which, if you manage to hang on to them, will make you a person who is always at peace with the world. 


  • First quality : you are capable of great things, but you must never forget that there is a hand guiding your steps. We call that hand God, and He always guides us according to His will.
  • Second quality : now and then, I have to stop writing and use sharpener. That makes the pencil suffer a little, but afterwards, he's much sharper. So you, too, must learn to bear certain pains and sorrows, because they will make you a better person.
  • Third quality : the pencil always allows us to use an eraser to rub out any mistakes. This means that correcting something we did is not necessarily a bad thing; it helps to keep us on the road of justice.
  • Fourth quality : what really matter in a pencil is not its wooden exterior, but the graphite inside. So always pay attention to what is happening inside you.

- The Story of A Pencil

 Few days ago, I've  experienced disappointing events in which for a moment I've doubted God's loving power on Me. It is painful on my part and for quite sometime, I've resented talking to him and easily forgotten all those blessings and guidance He unselfishly given to me and to my family. Having eaten by my agony and despair, made me far from Him, and yet I find no peace inside and just a massive lost of tranquility.....

I didn't found the answers to my questions, nor did I gained any sense of security after hours of exploring and investigating. Then just a second, it strikes me, that the only way to end my incompleteness and loneliness, I have to talk to him. I need to make amend on things that I've done, words that I've spoken and damages that I've caused in my relationship with Him - and so I did what I think the best thing one should do in my position, I PRAY. 

Last night, as I watched Bruce Almighty in star movies, I realized that it is only through him I can achieve certain peacefulness and be at ease to my current situation despite of all the odds and failures I've encountered. Imagine me crying and sobbing in a  Jim Carrey flick, I'm just thankful that no one is around so no explanation was needed. 

Indeed, like the above story, we are all a pencil that possess five important qualities that needed to be reminded on it's good way's use. Each of us may have lost an important opportunities or tired of the endless waiting for our own dreams to be fulfilled or our own terms to be followed by, still its not an enough reason to cut our ties with Him. He may give us moments of sorrows and unbearable pains and even series of depressions, but we have to hang on to him, pray and ask him simply to pull us tightly and that everything in US will still be the same if not, to emerged better and stronger after  the emotional turmoil we've come to experience. After all, he will not put us in this situation if he thinks we cannot handle it or conquer it. Trials and obstacles are often given not to destroy a human being's heart but to better his/her own relationships to the Almighty.

At the moment, I may still have sets of unfulfilled goals and under achieved  dreams,  but hey that doesn't means I will turn my back on Him. I'm hanging on that simple thought that one day, wishes will be granted in his own ways and terms, and from that point,  mornings will be shinier,  silver linings are obviously present, and contentment is just around the corner....

Every Wednesday night at exactly 9pm, you can always find me in our " balkonahe" watching the new addicting show of HBO - The Newsroom. A well-made television program, embodying today's journalism delivery. Jeff Daniels (you know him from Dumb and Dumber) perfect performance as a hard headed,unapproachable Will McAvoy, is one of the reason why the show generated good reviews since it premiere, and not to add it's increasing rating viewership. Jane Fonda, Dev Patel, Emily Mortimer and Olivia Munn are just some of the actors, delivering a remarkable performance(s) in this addicting tv show.  If you're aspiring a career in journalism, best to watch this program for some pointers, made me think why I hadn't pursued a career in this industry. Wait am I having a regrets right now?...Nope I guess, just an epiphany. Watch it guys and I promised worthy of your time and attention, if not, then no harm done. ;)
